The baker behind the book
Denis is not a restaurant chef, he is a devoted home baker who set out to prove that an unforgettable cheesecake needn’t be complicated. Cheesecakes to Die For is the result of years of curiosity, experimentation and very willing taste testers.
A passion that started with a single bite
Cheesecake has been a major passion of Denis’s ever since he took a bite of his first piece, many years ago. For a long time he didn’t make them himself, he simply enjoyed a slice, with the greatest pleasure, whenever the chance appeared.
Discovered on the road
During many travels with his family in the United States, that interest only grew. Without quite realising it, he became convinced this must be the cake with the most varieties in the whole world. Put simply, he decided, there is a cheesecake for every occasion.
From New York classic to imagination unleashed
Around seven or eight years before the book, Denis started making his own cheesecakes. He kept it simple at first, the classic New York cheesecake, but soon expanded his repertoire and let his imagination run wild. His friends and family taste tested every creation, and the reviews were usually very good indeed.
“I only want to present cheesecake recipes that I believe are among the very best, and show how easy it is to make the most incredible cake.”
Tested, again and again
By his wife’s count, she has tasted around two hundred different cheesecakes along the way. Every recipe in the book earned its place through that patient, delicious process of trying, adjusting and trying again, always keeping to Denis’s one firm rule: it should be easy and quick to make an amazing cheesecake.
He also made a deliberate, cheerfully “politically incorrect” decision to leave out all calorie counts and food values. A cheesecake is for enjoying, better, he says, to simply exercise a little more.

Every cake in the book was photographed, and dutifully taste tested, by Jakob Mydtskov, who Denis credits with creating pure magic and giving the book its beautiful look. Rest assured, Denis promises, the cakes taste every bit as good as they appear.
